Pizza Night!

A friend was bragging over the weekend about the delicious pizzas him and his lovely girlf have been making.  Being the pizza-lovers we are, we had to try it out for ourselves.   I'm not going to lie... we need more practice!  They looked good and the toppings were perfect but I'm afraid the base was too thick!  I swear I rolled that base for half an hour and it kept shrinking in front of my eyes!  I think we needed a touch more liquid! 

I'm going to give you the very easy recipe but use at your own discretion! 

225g Self Raising Flour
45ml Olive Oil
90ml warm water
Pinch of salt

Put the flour and salt in a bowl, add the egg and water and mix slowly with a fork until a dough is formed.  Kneed the dough for 5 mins and leave to stand for 15.  Roll out and put in the oven at 180 degrees for 5 mins.  Let it cool before adding the toppings.  We spread pasta sauce on the base then added roast peppers, mushrooms, ham and mascarpone cheese.  Cook for 12 to 14 minutes and enjoy!
