Veggie Bake

My computer has been broken all week so apologies for the lack of posts.  But here’s a delicious one for you...
I saw this on Pinterest of course!  If you’re not on Pinterest yet, you’re missing out!  They’re getting an enormous amount of press at the moment and are growing faster than fast (as my dad would say)!
I made this a few weeks back and it was so delicious that I did it again this weekend when we had both sets of parentals for lunch!
Sauté some chopped onions and spread them over the bottom of the dish. 
Slice the veggies and separate them into manageable piles of similar sizes.  We used potatoes, courgettes, aubergine, parsnips, butternut and tomato. 
 Place the piles onto your platter or dish one at a time moving from the outside in.   Start with the bigger ones on the outside getting smaller towards the centre. 
Drizzle some olive oil over the veggies, cover with foil and bake for half an hour.  Remove the foil, grate some parmesan over the top and bake for another half hour.   Ta-daa!!  We served ours with some roasted chicken thighs but would be great with any meat dish.
