Fat Free Chocolate Cookies
I recently did a stint in King's College Hospital, it's a pretty good hospital but I'd rather not have spent 2 weeks there. Luckily I'm recovering excellently, albeit without a gall bladder. This is just a little background to prepare you for the whoppers to come. My new post surgery diet consists of no chocolate (cue hysterical crying) no caffeine (insert miserable face here) and no cakes or cookies (what!!?!) or so I thought. The truth is I can no longer eat any high fat content foods (amongst others things). So I've been on a mad spree searching for low fat or fat free recipes to try. A girl has to have her chocolate fix after all.
So this is my first attempt at fat free cookies. I found this recipe, but had to alter it slightly to accommodate what I could find in my cupboards this morning. This is how I made them:
1 1/2 cups flour
1/2 cup castor sugar
1/2 cup cocoa powder
1/2 tsp Bicarb of soda
1/2 tsp salt
1/2 cup honey
6 tsp Wilton Meringue Powder + 90ml water (equiv 3 egg whites)
Mix your dry ingredients together in a large bowl. Combine the meringue powder and water and stir it into the dry ingredients with the honey. Drop teaspoons full onto a prepared cookie sheet. Bake for 7 minutes at 175 deg C.
Easy peasy and they taste pretty good too. As an added bonus the recipe has all the nutritional information for any calorie counters out there.
I might get some syrup in to try instead of honey to make them slightly sweeter but they definitely satisfied my chocolate cravings. I even went one step further and stamped some hearts out while they were still warm (I like my cookies to look pretty as well as taste good). Oh and Miss D loves them too.
