Super Easy Homemade Ice Cream

I've just posted a piccie of these deelish ice cream cookies on Instagram and its had such a reaction that I'm going to let you in on the secret of my homemade ice cream.

This is the easiest ice cream recipe ever!  In fact, does it even count as a recipe if its only two ingredients?  You don't need any fancy equipment either, just an electric beater, a bowl and the freezer.

The ingredients are a tub of double thick cream (300ml) and a regular sized tin of condensed milk (395g).  Whip up the cream until it's nice and thick and then stir in the condensed milk.  I usually skim a few teaspoons of condensed milk off the top - because I'm an addict but also because the whole tin tends to make the ice cream just a little too rich.

Now the fun part - add whatever you want to create a fun flavour.  Vanilla seeds, peppermint crisp chocolate and M&M's are all great but my current favourite is chocolate cookies.  I just crumble about four cookies into the mixture.


And to take it one step further, squash the ice cream between two of the cookies and you have Gone. To. Heaven!  I freeze the cookies in a muffin tin which stops the ice cream mixture from oozing all over the place.
